Deidara vs Gaara, hmm i personally didn't like that one gaara got owned by deidara (he's too fast for his sand on that bird). But the rest you listed are my fav as well but you forgot one Drunk lee vs kimimaru sake all the way

the first series i have to say the Zabuza fight was the best. And a close second was the Kimimaro fights.
In shimppuuden i would have to say the Gara vs Dordia... (SPELLLING?) in the sand village

But on that note, The Shikamaru vs Hodan fight made me so excited, I loved every moment of that one!

in naruto original series i liked zabusa vs kakashi while in shippuden emm i dont know i dont have an favourite one yet maybe the akatuski fights are better

In the original series I liked:
1)Zabuza vs Kakashi the first epic fight of the series
2)Sasuke vs Naruto on the hospital roof, my favorite part of that whole fight was the end when Kakashi showed up out of nowhere and just threw both of them in those water towers
3)Sasuke vs Naruto at the Valley of the End. At some parts the animation was prety weird, but the fight was just awesome, everything I expected it to be
4)Sannin battle, need I say more?

From Shippuuden:
1)Sasori vs Chiyo and Sakura, mostly because Sasori was awesome

  Spoiler: and not in the anime yet 
2)Itachi vs Sasuke, I was waiting for that fight for ages
3)Bee vs Kisame loks pretty awesome

Well my favorite original fight and most underrated fight. has to be The 3rd Hokage vs Orochimaru I mean the guy summoned the first two hokages and almost the 4th did anyone see that coming?

that's not underrated at all... one of the strongest hokage got wiped out by a michael jackson, that's pretty serious stuff. the anime already showed orochimaru being affilliated with regeneration and stuff, i for one wasn't surprised...was a good fight though

my favorite fight however, was
  Spoiler: epic 
itachi and sasuke + madara's talk later on.
